We derive our energy from food – the better its quality, the more energetic and active we are. This is why at the Pirchner Hof we prefer to serve fresh, untreated produce from our own farm and the region. Hildegard classified food as ‘warming’, ‘cooling’, ‘drying’, ‘moistening’ or ‘cheering’. Hildegard’s classifications are easy to work with and list very few prohibitions. For instance, moderate amounts of beef, chicken, venison and game with small amounts of alcohol are considered part of a Hildegard-style diet: well-balanced and full of good quality healthy foods. This is the approach you’ll also find at the Pirchner Hof.
