Today, Hildegard von Bingen is considered a visionary, her beliefs and actions far ahead of her time. She was born in 1098 and entered a Benedictine convent at the tender age of eight. Legend has it that she was a sickly child with a prophetic gift. She died in 1179, aged 81, after devoting her entire life to her convent. She was canonised by the Pope in 2012.

Throughout her life she was deeply concerned with religion, medicine, ethics and cosmology. She made a name for herself as a composer and was known for her wise counsel. The books she wrote detail her extensive teachings on nutrition and health as well as her comprehensive knowledge of herbs and medicinal plants. Saint Hildegard von Bingen’s holistic doctrine is based on six simple principles:
