From the farm to the table
“The better a food can grow and flourish, the better it is for your health” (Hildegard von Bingen).
We are very proud to be able to obtain the majority of our fresh food directly from the neighbouring Pirchnerhof farm. Thomas Peer, incidentally a 4th generation farmer, supplies our kitchen daily with fresh beef, poultry, eggs, milk and vegetables. The free-roaming chickens provide the best eggs, which are processed in the Hotel Pirchnerhof into fresh spelt noodles or traditional pastries, among other things.
The cattle move from the Tyrolean nature farm Pirchnerhof to the alpine pasture in Gerlos in summer, where they enjoy the lush pastures and particularly high-quality meat from young cattle, which has been awarded the AMA seal of quality, grows up.
The controlled, natural cultivation of various vegetables and salads according to Hildegard von Bingen gives our cuisine a unique freshness and creativity. You will also find special fruit varieties such as quince or chokeberry in our orchards.
